Earthquake Cookies

A quick and easy to make sweet snack that goes really well with coffee!

Ingredients

  • 300g all-purpose flour
  • 150g cane sugar (brown also works)
  • 120g butter (half a block)
  • 50g cocoa powder
  • 2 eggs
  • 1 espresso (about 50ml)
  • 1 tbsp baking powder
  • 50g granulated sugar
  • 50g powder sugar

Preparation

  1. Melt butter in a pan
  2. Whisk together butter and cane sugar with a mixer
  3. Slowly add eggs and espresso into butter mixture
  4. Mix flour, cocoa powder and baking powder
  5. Whisk flour mixture into butter mixture. Don't worry if the mixture is still a bit runny afterwards.
  6. Cover with cling film and let chill for 2 hours
  7. Pre-heat oven to 180ÂșC
  8. Prepare two dishes with granulated sugar and powder sugar for dipping
  9. Scoup out about ping-pong ball sized chunks of dough, roll them into a ball and dip them first into granulated and then powder sugar
  10. Place balls about 10 cm apart from each other on a baking tray an cook for 15 minutes.
