Scallion Pancakes
Chinese classic, awesome both as a quick snack or a whole meal!

Ingredients
- 2 cups all purpose flour
- ½ tsp salt
- 1/2 cup hot water
- 1/3 cold water
- 1½ cup thinly chopped scallions
- 1 tbsp 5 spice powder
Preparation
- Pour flour and salt into bowl, make a hole in the middle and pour hot water in there, then let it sit covered with a wet cloth for 10 minutes.
- Add cold water and mix. form into a ball and cover for 5 minutes.
- Knead until smooth and then let sit covered for 20-30 minutes more.
- Divide dough into 4 parts, and roll out, brush oil on there and sprinkle with 5 spice powder and scallions
- Roll into a cylinder, then form a snail and roll that one out again
- Fry for 2-3 minutes with a little oil then for 1-2 min on the other side.
- Cut into wedges and serve with Sweet Chili sauce.
